The ingredients needed to make Mole De Olla:
  1. Get Vegetable Oil
  2. Make ready beef chuck with bone, meat cut in cubes
  3. Get green beans cut in small pieces
  4. Prepare Calabazita (Mexican Zuccini) cut in medium size cubes
  5. Take fresh whole corn cut in 3 to 4 pieces
  6. Take epazote (mexican herb)
  7. Make ready Guajillo Chiles(dry chiles)
  8. Get Pasilla Chille (dry chiles)
  9. Get garlic
  10. Take ancho chile (dry chiles)
  11. Prepare small onion
  12. Get Xoconostle (fund in mexican stores is a kind of cactus fruit, a bitt bitter and acidic), peel, remove seeds and sliced

Don't confuse mole de olla with traditional mole which includes chocolate as a base ingredient. That type of mole is delicious, but it isn't the same as this. Mole actually refers to a combination of ingredients or a salsa, so that is why this recipe has the name mole de olla. An olla is a pot, so it is basically a combination of ingredients made in a large pot!

Steps to make Mole De Olla:
  1. clean an devein all chiless, and cook them with water untill soft
  2. add oil to a deep pot, untill hot then add beef chuck and salt, cook until meat looks caramelized
  3. put the cooked chiles and the water they cook on, the onion and the garlic in a blender, blend it. and strain it, so all the chile skin will not end up in the soup
  4. once meat is caramelized, add the chile mix from the blender
  5. add more water until the meat is completely cover,add some epazote branches, let it cook in low flame for about 20 mins.
  6. add all vegetables, including xoconostle. if nessesary add water to cover the vegtables, cook for 20 more mins, untill vegetables are completely cooked.
