Peel and dice the onion, then deseed and dice the peppers. Add the beef and stir until it has browned.   2. Add beef mince into it and cook about 8 mins. Add corn and cook until the corn soft. And then add 1 can chopped tomatoes and cook until it’s thicker
  3. Combine sour cream with lemon
  4. Heat the oven at 180degree and bake taco shells for 10 mins.

It's usually found on enchiladas but here it compliments the sweet bitterness of green peppers, blistered over the grill for the ultimate vegan tacos. Place a little of the mixture on each tortilla and roll up, or spoon into the taco shells. Secure tortillas with a cocktail stick. If using tortillas, heat the oil in a frying pan and then fry the rolls quickly until golden.
