- Preheat oven to 375.
- Brown and drain ground beef, onions, and peppers in large skillet.
- Add refried beans to skillet and stir until mixed evenly.
- Toss in a sprinkle of cheese, stir once more. Set aside.
- Heat all three cans of soup/sauce in a separate pan, stir with a whisk.
- Add juice from jalapenos and a sprinkle of cheese.
- Dip tortilla in sauce on one side.
- Fill tortilla with mixture, sprinkle of cheese, and dollop of sauce.
- Fold and fill a greased baking pan until out of mixture.
- Pour remaining sauce over the top of folded tortillas and cover everything with remaining cheese.
- Cover with tin foil, bake for 45 mins, then remove.
- Let it cool, and serve with sour cream, salsa, and whatever else!
Repeat procedure with remaining tortillas and beef mixture. Arrange enchiladas, seam-side down, in prepared dish. It's a fast and easy favorite. Roll tortillas up and place in the casserole dish, seam-side down. Stir in refried beans, green salsa, salt, and cayenne pepper.
